Recipe: Date and Carrot Salad

Delicious Tunisian dates will soon be ripe. As inspiration for using these nutritious fruits, we would like to give you a recipe for a tasty date and carrot salad.

Dattel-Karotten-Salat

You need:

  • 400 g peeled carrots
  • 5 tbsp olive oil
  • 2 shallots, cut into fine slices
  • 1 pressed clementine
  • 1 apple, cored
  • 4 dates, with stones removed
  • 1 tbsp sesame seeds

Preheat your oven to 200°C. Cut the carrots into around 3 mm thick slices and spread them out onto a baking tray. Next, drizzle 2 tablespoons of olive oil and a sprinkle of salt and pepper over the carrots. Place the baking tray with the carrots into the middle of the oven. Cook the carrots for around 20 minutes.

Mix the shallots and the pressed juice in a bowl. Add the remaining oil and season with salt and pepper.

Cut the apple into slices 2 mm thick. Take 4 large plates and place apple and carrot slices onto them in alternation. Cut the dates lengthwise into pieces and also spread them onto the plates. Drizzle over the dressing and sprinkle the sesame seeds over everything.

This recipe is particularly delicious with grilled chicken or fish, with a tajine or couscous salad.
